After catering his brother’s Maui wedding barely a year earlier in December 2011, it was a pleasure and honor to get a call from the groom’s brother to provide catering services for his own wedding earlier this year. More than 35 guests attended Tom and Donna’s Maui wedding and made the trip from Canada. Four generations of family were represented with grandparents making the trip to Maui too! The wedding included a wedding reception dinner served poolside under the stars. Wondering what we served for the catered wedding in West Maui? The afternoon wedding festivities got underway with an open bar service. After a photo session to capture the family photos, the lawn wedding ceremony began at 4:45. Afterwards, the wedding photographer still had plenty of time for sunset wedding photos of the bride and groom even with the early sunset times in January. Cocktail service began and hand passed pupus were served for the wedding guests. The pupus, traditional Hawaiian appetizers, included Vegetable Crudités with Spinach Dip and Homemade Hummus with Pita Chips. Hot entrées for the passed appetizer service included Chicken Satay with Thai Peanut Sauce; Pot Stickers with Ponzu Dipping Sauce; and Coconut Shrimp with Mango Chili sauce.

After the guests had ample time for further mingling, the couple was introduced and danced together as a newlywed couple for the first time. The double tier wedding cake was iced with ivory fondant frosting and adorned with fresh tropical flowers of orchids and pink ginger.

Following the traditional champagne toast, the wedding guests enjoyed dinner. The dinner began with Kula Greens with Crispy Vegetables and Miso Vinaigrette, fresh Maui Tomatoes and Cucumber. Warm Focaccia Bread made earlier in the day was served with Cheese Dip. Our wedding reception menu entrée station included Grilled Hawaiian Fresh Ono with Lemon Caper Sauce; Chef CJ’s Famous Mango BBQ Ribs and Kalua Pork; Rib Eye Steak with Maui Onion Chutney. The entrée was served with Pineapple Fried Rice and Sautéed Fresh Vegetables. Dessert included CJ’s Famous To Die For Hana Bars and tropical fruits. Fresh hot coffee and tea were served.

The Wedding Dinner under the Stars was served on china with bamboo handled silverware. White linen tablecloths covered round dinner tables with white padded chairs for seating. Clear ‘Euro Lights’ were strung to provide ambient lighting for the wedding. The couple saved money and helped make their Maui wedding affordable by utilizing local sources we referred to for purchasing the alcoholic beverages. We supplied coolers with ice and a Maui county licensed bartender to serve the guests.
